Just finished my 5K mile service, which includes changing the primary fluid. Pretty straight forward. Put new Sny3 in. I used to be able to snick through the gears (clutchless) very smoothly and accurately. Unfortunately I drained the fluid before looking to see the old level. The tech manual is very black and white as to where the level belongs. I think I may have it a bit too full.

Now when I try clutchless upshifts, it seems to slip, rev freely, then bang into gear.

Thoughts?

I am not familiar with the oil you used, but are you sure it is not a full synthetic. In other words is it really safe for wet clutches? If it has any of that energy conserving stuff in it it might have screwed up your clutch plates

Oil level should be just touching the bottom of the clutch's diaphragm spring. It is likely that overfilling is causing your problem. Overfilling would also tend to cause the bike to want to move forward with the clutch pulled in but in gear, and shifting from neutral to 1st gear while stopped would produce a raucous and rough gear engagement.
