I took the my 97 S1 for a 100+ mile ride and breather hose for the rocker box vents leaked out a 1/4 of a cup once i shut it off and pulled it in the garage. Is there something I should check or is that normal?

How long had it sat before your ride? How many miles are on the motor? What was the last thing you did to it before you went for the ride? No it's not normal.

Before I bought the bike it sat for almost ten years then I got it serviced and road worthy and rode it for 20 miles trips here and there. It has 5100 miles on it

I believe the culprit are the Umbrella Valves, 26858-89 / 26856-89A, just under the Rocker Covers. Expect they are old and stiff. Their function is to let air pass out of the top of the heads and keep as much oil as possible in the motor.
They are easy to replace. Just remove the Outer Rocker Cover and you will see them on the Spacer, Rocker Cover. One for each head, on the Right side, very near the bolt where the air passes out to the air filter.
You will see a very small hole near the valve which allows any oil which passes the valve to leak back down into the head. I like to drill this hole one size larger.

The alternative is too much compression gas passing the rings into the motor.
When running, are you feeling a lot of air coming out the top of the heads? there will be some, just not a rush of a lot of air.
Hope that is not your problem as that would require piston ring replacement. Or at least a lot of hard acceleration runs to attempt to re-seat the piston rings.

Still most likely the Umbrella Valve rubber is just old and stiff. That rubber is 24 years old.

it sat for that long--I hope whoever serviced it ran it long enough to get all the oil up out of the crankcase as these bikes tend to "leakdown" into the case as the check valve gets older. Looks like bike is low on oil, and if it added it causes a surge of oil out of the oil tank. I forgot this once and oiled the barn rafters really well once---

I've got an 01' X1 Lightning that's also dumping a lot of oil out of the breather hose which is under the seat. This bike hasn't been ridden often over the past 8 years and started the oil thing on a ride about 2 yrs ago. I just got it out of storage and it's still doing it. The bike has 26k miles on it and runs great. Could this be the likely culprit on my 01?

Oil from THAT hose goes to the trans case. It means your sprocket shaft seal ( shit seal is redesigned) is now leaking right on time at around 30k miles. Check your primary oil level and pump some out. You can ride it but need to watch the level. When Mine did this I put in the UPDATED SEAL. and replaced the clutch stack. The granade plate was just starting to fail and the clutch plates were getting close to going out of spec. Keep the eng. sproke seal race/spacer and be careful with it. You cant buy a new one. You can carefully polish the old one a little. the new seal will use a diff area to seal anyway.

If you mean the transmission breather hose, then the seal which needs replacing is behind the alternator on the crank shaft. Engine oil is leaking into your transmission. Tools needed are:
~ New cover gasket. Recommend the rubber coated metal one, which can be reused.
~ Likely a good time to get a primary cover gasket kit which will include all the other O-rings and Derby cover gasket, (Genuine James or Cometic).
~ Torque wrench that works in reverse/counter-clockwise because the clutch bolt is a reverse thread.
~ Impact hammer that works in reverse/counter-clockwise, because that clutch nut can be hell to get off.
~ Sprocket Shaft seal installer. The 3D made one works great! Buy the long one so you do not need to add spacers, (At the bottom of the below link).
~ Metal bar to wedge between the sprockets and stop them from turning.

Sprocket shaft seal, which is confusing, because it sounds like the front belt sprocket. That is the transmission sprocket, which can leak, but that would leak behind the front belt sprocket.
Victory is talking about the same sprocket I am referring too, the crank sprocket shaft seal.

Ask your HD shop if you can borrow the Seal tool for the shaft. They should let you do that.
