Just bought my first Buell a 2006 XB12S, and have discovered riding all over again. So with no manual to look at the question is...When the fuel light comes on the digital trip thingy switches itself over to fuel and begins to count up. Is there a magic number I need to be aware of that is the "your out of gas dumb" number?

That magic number will depend on many factors. When the light comes on, assuming its not malfunctioning, you should have approx half of a gallon left. Assuming you aren't going full throttle, you could go about 20 miles before worrying about it.

2006 user manuals may still be available in PDF on the Buell site.
