what is the best psi for great grip but not to soft???

Depends on the tire. Best bet is to contact the tire manufacturer.

Over the past fifteen years I have tried everything from 34-40# in the back and find 34-35" in the rear works best for traction and mileage.
In the front I run 42-44# to eliminate cupping and best mileage. Running at the recommended 32# and the tires cup like crazy
I currently get around 12,000 on the rear tire and 17-18,000 on the front
