How do you tell if your carb is stock or has been jetted? I bought mine used and the previous owner did not know.

Is that a CV-40? If someone changed the slow speed jet they probably also removed the little metal disc that covers the slow speed mixture adjusting screw. So if that disk is missing there is a change it was done. That is part # 9 at this link:

Your bike is getting on in years, might be due for a new set of seals on the intake manifold and you can get a CV-40 rebuild kit and give it a general overhaul while you've got it off.
