I'm going to try this recipe this week! Sweet and Spicy Bacon Wrapped Chicken Tenders prep time: 5 MINS cook time: 20 MINS total time: 25 mins INGREDIENTS: • 1-1/2 pounds chicken tenders (about 10 chicken tenders) • 10 slices bacon • 2/3 cup firmly packed brown sugar • 1 Tbsp chili powder INSTRUCTIONS: 1. Preheat oven to 375 degrees. Line a rimmed baking sheet with foil and top with cooking rack. 2. In a shallow dish, combine brown sugar and chili powder. 3. Wrap each chicken tender with one slice of bacon. Coat bacon wrapped chicken tenders with the brown sugar and chili powder mixture. Place on baking sheet. 4. Oooh....must try. One of my favorite rubs/grillin' spices is from JK's Steakhouse in the outer banks. They mail-order, and I love their Cowboy Blend. Good stuff. Might work well on here, too... |

Crusted old bird, might throw in a dash of cumin... I love monkeying with spice blends. Tuesday Morning around here has a great section of stuff like that. I've got two different coffee rubs I love- one is from Weber, the other from Spics Labs. Those would be great on chicken, I've done pork chops with them, yum! Yes, I'm a spice ho. Marcia gives me grief whenever I bring home a new one to add to the crowded cupboard. I have a tip for youn's- on the road to/from Suches through TN on highway 68, be sure to stop in Tellico Grains Bakery. Treat yourself to a killer sandwich or wood fired pizza, then head to the back wall. They carry the whole range of spices from Alchemy Spice company out of Chattanooga. Cool, thanks man! I just shot them an email inquiry as to where near me they could be found. Have you tried the smoked chipotle version? As I mentioned, Alchemy does some great blends, they're worth mail ordering from too. Regarding Tuesday Morning- the stuff I get is from "The Spice Company". Big glass jars, all good blends. The best by far is a "Thai Green Curry". Flat awesome on chicken, fish, pork, shrimp... yum! Crusted Old Bird, sorry about the highjack, BTW. Let us know how the bacon bird turns out. |

They sell out of the restaurant in OBX...and online. That's all. I mail-order a box a year. Yea, I've tried the chipotle, but don't like it as much as the cowboy blend. The cowboy is good on ANYTHING - I've tried it on beef, chicken, pork, tuna...it's REALLY good on fries...I haven't yet, but I should try it on some mixed veggies sometime... But that's the cool thing, you get as many of each bottle as you want, you don't have to buy a "six pack" of one flavor or anything. I think I'll have to try that bacon recipe too...I can already feel my arteries hardening. I LOVE IT! |
