Do you have a favorite hot sauce? I do. At the present time, I really like the flavor of Tabasco Chipotle sauce. It goes really well on a breakfast sandwich and it's equally tasty on a sausage burger. Over the years, I've had several different preferences for hot sauce. I used to think that the hotter a sauce was, the better it was. Now that I've become a crusty old fart, my stomach won't allow me to ingest super hot sauces without raising hell with my entire digestive tract. Flavor has taken precedence over the degree of burn. Still, I like spicy foods, and I have no intention of giving them up. I may have to compromise a little on the degree of heat, but I still love a spicy condiment. I like to vary my sauce with different foods. As I said, I like the Chipotle sauce with breakfast sandwiches and sausage burgers, but I prefer James River BBQ sauce on a rare Roast Beef sandwich and Stubbs Sweet Heat BBQ sauce does really good things for roasted chicken. For pork, I have a number of different sauces I use depending on my mood. However, the Tabasco Chipotle sauce is at the top of my list of delightfully tasty enhancements. What's your favorite hot sauce? |

As an ersatz Mexican, I'm a big fan of Cholula. Sriracha is a close second. |

Pure heat without flavor is simply masochism. Good for some, but not me. Tabasco Chipotle is good. Much better than the original, which is both raw and bland at the same time. The Chipotle version is great on eggs or sprinkled on chips & cheese in the microwave. Crystal, Pete's, etc. The Buffalo Wing signature ingredient ( with butter/margarine ) is one note and classic. I don't keep any. Sriracha sauce also has place of pride in my fridge door. I often throw a dash into eggs for scrambled or omelette. THE go to sauce to drizzle in stir fry. But my favorites are the chutney/chitney style sauces based on citrus juices with pepper flakes like Country Sweet, Sal's Sassy, & Smitty's, all local rib/chicken joints. ( & the sauce lives on after the restaurant is long gone ) The sweet flavor of citric acid vs. and Vinegar in an orange or lemon based sauce can sooth the palette as it assaults it with heat. Home made sauces given by friends also live in the fridge door and are gratefully used. (Message edited by aesquire on December 17, 2017) |

I use Frank's Louisiana Hot Sauce when I just want to add flavor (it isn't really all that hot). Most of the time I use Tabasco, for no other reason than it is pretty ubiquitous when you ask for "hot sauce" in a restaurant. When I REALLY want to kick up the heat and add a pleasant flavor (once you get past the pain, of course), there's Dave's Original Insanity Sauce. Those are pretty much my three "Go To" sauces. "Scorned Woman" is another good one (when you can find it... have to go to a specialty shop for that one). |

Dave's insanity sauce is definitely insane! Just a nickel size glob of it will have you raising both lids on the toilet and sitting in the water watching the steam roll at 2 in the morning!! DAMHIK! There's a group that are all good and very similar and that's Texas Pete's, Franks, Cholula and Crystal are all about the same heat. All good in my book. The Chipotle Tabasco is good too. And kept going through multiple locations, but the same owner. It wasn't unusual for me to be the only white male within blocks at 1 am. Only had 1 time anyone tried to give me trouble, And Smitty himself started yelling at the morons, "He's been a customer here long before you showed up!" Then something about your best part & momma's leg, and the entire store full of customers offering to toss the rude folk out the door. You did Not fight at Smitty's. The Fire Trucks would stop by after a fire to pick up 1/2 chickens & shrimp for the Fire House. Ditto the police. Sometimes with suspects in cuffs in tow. "too cold to leave him in the car, might as well get one decent meal before jail", as they bought him chicken and he chowed down with one arm cuffed to the radiator, next to the college kids next to the gang bangers. Sitcoms just don't get inner city life, it's too absurd. |

Srirachi is our go-to, but we DO like the hot, HOT ones too. Tabasco makes a habanero version which I love- it gives the signature flavor of Tabasco with strong heat too. Regular Tabasco bores me. I'm a hot sauce junkie. If I see a specialty hot sauce store, I'll be in there until I find something to try. I read every ingredient label- if they cheat with capsaicin extract, nah, don't want. If they use some kind of fruit, maybe. The ingredient list and the order of listing is key. When we went to Tarpon Springs a while back, found a bottle of "Weapons of Ass Destruction", along with "Camel Toe". The first is as advertised, the second has heat, but a good sweetness too. Several years ago, I got a bottle of "Deer In The Headlights" from the gas station in Suches GA- that's been a fave too, but I'm running out. Been wanting to make my own- we grow all kinds of peppers, including scorpions... I keep a bottle of Cholula in the fridge, either original or chipotle. Half the time when I get up in the middle of the night, I do a pull off the bottle before going back to bed. Makes for interesting dreams. Z |

When I worked for Breakaway Imaging, somebody there had brought in a bottle of Ass In Space hot sauce. It wasn't bad, especially on Chinese sausage. I once gave someone a bottle of One F*cking Drop At A Time Hot sauce. It came in a bottle that had an eye dropper for a cap. I never tried it, (you don't open a gift before you send it to someone) so I don't know if it was just super hot, or if it had a really good flavor to it, as well. I like Cholula Chipotle sauce, but it's hard to find around Cincinnati. That's how I started using the Tabasco Chipotle sauce. I've found it to be quite addictive. Jungle Jim's International Market stocks over 1500 different brands of hot sauce. I have never seen such a large assortment of spicy liquid. They even have President Trump's Make America Hot Again sauce. I love the label, but I have no idea if it's good sauce or not. They also have Moe, Larry and Curley's hot sauces. I tried the three stooges BBQ sauce, and I liked it, but I bought a bottle of Curley's sauce for a friend. Once again, I didn't taste it, so I don't know if it's any good or not. |

There used to be a wonderful little "Brick & Mortar" shop in Port Jefferson called "Pepperheads" that I visited on a fairly regular basis. They've decided to shut their doors and go online, but I already do my online shopping at mohotta.com. I liked being able to see and sample the stuff, plus they had a lot of local products as well. Too bad... |
