It is usually unsafe to eat the livers of carnivores. They concentrate the toxins and other things there. IIRC Tiger & Polar Bear livers will OD you on Vitamin E, I'm not sure on other critters, large Carnivores are not a standard diet item for most cultures. Since we ate all the Mammoths, anyway. The muscle tissue, regular meat, is fine to eat, just don't go for the organs. |

I had a bear steak at a restaurant in Chicago in the '70's. IIRC, it wasn't much different from beef. |

Alligator is delicious. Pure carnivore. Can't say I have eaten the liver though. |

Not much out there can beat horse tenderloin for flavor and texture. Wild goat is also delicious when prepared properly. |

Were mammoths carnivores? News to me. I think bear liver, specifically polar bear liver, ODs you on vitamin A, not E. |

I think you are right..... don't eat liver. I said mammoth since I think few people remember saber tooths. http://animals.howstuffworks.com/mammals/eat-polar-bear-liver1.htm yep Vitamin A. Don't eat Carnivore liver. I don't like liver anyway, and don't like sweetmeats ( organs ) at all, even though I've had some cooked in quite tasty ways... I'm just squeamish. I've had and will try again... Bison, Gator, Octopus, rattle snake, deer, elk.... a few more. I've had and will not try again a few others, chocolate covered ants, popped/fried bug, various other critters including rodents of various types... I'm too chicken ( tastes like Gator ) to try any more darn rodents, Capybara, Fugu, and anything else I choose to not like without tasting. I'm not sure how much profit margin you can pull with a robot burger maker with multiple choice meat mixing, but I would try a mix just for fun. BTW, my Grandfather taught me to make Venison/pork sausage & burgers. The fat in the pork and the lean of the venison mix very nicely, a good combo. I bought some chicks for layers, of course I ended up with a few roosters. I butchered one the other day and baked him in the oven. That was an extremely satisfying meal. Chicken, zuchinni, and potatoes, all home grown. I used the liver, gizzards, and heart in a steak and potato stew a few days later. The wife and I got a crock pot a short while back, and I've been putting it to good use. Can't wait til my rabbits are old enough to breed and produce tasty little bunnies. It is so satisfying to eat food that you've raised and prepared yourself. |

It is so satisfying to eat food that you've raised and prepared yourself. As a child I used to "help" my uncles butcher hogs and bulls. We'd be up at 4 in the morning, get a fire going and kill some animals. Small island, gotta get all the meat cut and delivered by the time the sun comes up, or it will turn pretty fast. My point here is I have never tasted anything so delicious as baby back ribs straight out of the hog, straight to the grill, then straight to my stomach.
