Well racked the apple jack tonight(switched it to another container) This years edition is really quite tasty much better then last years already and it's still fermenting. I had to do a taste test it was just screamin at me It is at 12% alchohol now and still fermenting we will see, I hope it doesn't go past 15% then the taste will change. I put a pinch of cinamin in this time and it melded great tastes like apple pie with a kicker |

Well I got 5 gallons of 12% cider for about $45 invested. A quart will do ya if ya get me you could invest another $20 and spike it with everclear and jump it up to about 20% that would be 20 friday nights worth for me so at a $65 investment cost about $3.50 for a load on |

I consider apples continuing proof of the existence of God. Apple libations proof that not only does God exist but that he loves humanity. Details, details, post lots and lots of details. My favorite part of the process is when it just starts to turn and is full of bubbles. - Not much kick but such a sincere, fun taste. Most of 55 years ago the old-man had some apples squeezed and they filtered the juice thru the remnants of some grapes just squeezed. - The taste lingers Post more details. |

you guys have any links to any good how to sites? i did some light googling last night but not having ever done it before i don't know what's crap and what's not. i want to try this to try and save a buck or two but also because it sounds like fun. |

It is astonishingly simple. what you need 2 5 gallon pails 3ft of tubing 1 push on fitting 10lb of sugar brewers turbo yeast or just plain brewers yeast 5 gallons on 100% apple juice NO PRESEVATIVES a pinch of cinammin plastic water bottle with top cut off fist clean everything with warm water and soap put into the 5 gallon bucket 3 gallons of juice slightly warm the 1.5 gallons and mix in 10lbs of sugar mix the 2 components together add yeast stir vigorously seal up with fitting through the top and tube connected to the fitting leading into the bottle with half full water(creating an air lock) Let sit in a 70 degree agrea until it stops bubbling wait 1 more week for yeast to settle siphon out through a cheese cloth filter either bottle or rack it let it sit for an even better flavor in the second 5 gallon pail. I usually can't wait but I am this year enjoy!!!!!!!!!!
You can also spike the finished product with everclear for added ummm value |

BTW I should tell you I usually only end up puttin 2.5 gal then 1.5 mix in and see how full the bucket gets I will add till about 1/4" below the fitting as it protrudes just a bit into the bucket. I have in the past cut the fitting down on the underside. |

Sweet! I went to my Mom's house to pick up my 3yo. son on Saturday afternoon, and she has him helping bottle the liters of "apple pie" as we call it. Bottled up about 10 liters. We use the everclear in ours for the kicker. It's very tasty, dangerous stuff that my family has been brewing for 3 generations now. We use the cinnamon sticks too. |

I am on my way!!!!!!!! get the fireworks going create a diverson and I am in like flynn to pinch the leftovers All I remember about the distillery is Sorry Sir I couldn't pothibly fit him in till twosthday And of course the greatest whiskey I ever tasted. |

Pulled it out and switched containers again, Alcohol is down to 8% taste is up 100% don't know how it happened but I don't care it tastes great hopefully next weekend I bottle it up!!!!!! |

10lbs of sugar and 5 gal of apple juice should make a drink much higher than 8% alc, how are you measuring it? I have a braggot going now, thats currently at 16%, id like to drop it down some more and get it close to 20%. Also a barleywine at 9.5% and an ipa at 6.5% |

let the home brewing / harvesting season begin.... The Watermelon/Raspberry White Lightning Hooch is on deck for the holiday tasting season. Great Grand Pappies Recipe - No Sugar. It keeps the brew crisp and the dumb revenuerers off the scent (ie - don't go to town for sugar -... they are less likely to nab ya) |

I think I messed up the hydrometer was resting on the bottom DUH I checked it in the finish container and I am at 12% still so I added some juice and dropped it to 10% tastte is still good!!!! |

Slicker, your not going to get nabbed for buying sugar, plus unless you are distilling it, its completely legal. I'm going to get a batch of appfelwein going after I move, and just use some champagne yeast. Brum, you might want to look into other yeasts as turboyeast usually isn't the best tasting imo |

Yeah the protien haze I believe it's called is pretty heavy and it does have a heavy taste but I like it with the apple. I will try some other yeasts through the year and see what I get thanks for the heads up. I am thinking of attempting a corn liquor for the winter. It aint Illegal to make it just to sell it |
