Hey all- here's the downlow: For the first time ever I'll be spending Christmas at MY home- a little over 2 years ago my mom passed away, dad's been long gone- now it's just my sister and me, and my GF... We'll be going to my GF's son's house for Christmas this time, and I'm planning on doing a whole ham for the crowd (less than a dozen peeps)... How about some of youn's favorite recipes? Feel free to mention sides, or alternate ideas. Of course I've been cruising the Internet's foodie sites, gotten some good ideas, but since I spend most of my time on the BW, I figured I'd ask around here... Funny how we take for granted all the "home cooking" that we get when we go visit mom & dad and our families... now it's up to me. Thanks in advance, and Merry Christmas to all!!! |

Check Food Network for Alton Brown's city ham recipe. I've done this one a few times and it tastes great. Sweet potatoes make a good side dish. Potato salad if you're going a little less formal. |

For sure in the sweet taterz...get some good sweet taterz and some white yams...scrub em up good...rub em down in butter and roll em in brown sugar....wrap in tinfoil and cook until a toothpick goes in nice n easy.. And don't forget some beans, any kinda beans...I like field peas...cooked with a ham hock or some bacon...cook em till they are real tender and the juice is good and brown...if yah like butterbeans or lima beans, put a pinch of bakin soda in to kill the bitter taste...they need some ham in em too. How about my Christmas favorite...rock soup...(there is a good story that goes with the name of this dish)...take a fist sized rock, well washed and put it in a good sized pot...half fill with water...bring to a low boil and add whatever you have for seasoning...a cut up steak, some venison, or whatever meat you have...throw in some taters, carrots, beans, whatever you can find...when you are finished, wash the rock and save it for next time. |

I didn't say Okra. Some collard greens with the ham, Oh Ya. The potatoes have to be real not powdered. My wife is going to try and make some green cheesecake. It was something my grandma used to make every holiday. I hope it comes out right. My uncle and I used to split the leftover. |

A glazed ham on the top rack in the smoker. Under that, a turkey rubbed with olive oil and spices. Under that, a big bowl of baked beans. Add smoke and gravity. Yum! |

for the last 5 years i have cooked christmas dinner for my family. we alway try something new or a twist on an old favorite. this year i am making braised lamb shanks. haven't settled on what sides will be going with them yet. |

Great stuff guys- I knew y'all would come through... I'm thinking about the smoker thing- my next door neighbor has one (I should, hmmm, mebbe buy myself a "gift")- gotta be sure if I do this that it's 100% good. The GF is already heckling me about attempting to cook an entire ham. Of course, now I'M GONNA DO IT. I'm a pretty decent cook, ain't skeered... Delta, those ribs looked AWSUUM! Great plate presentation too- nice to know I'm not the only one who likes to take pics of freshly cooked grub... Please, carry on! |

Nothing beats a smoked turkey, all juicy and earthy. With a ham, some brands are very salty, way too salty for me. Pre-cooked (smoked) and spiral pre-cut is my favorite. My other favorites include... Smoked fresh salmon. Some nice chilled Riesling. Steamed kale. Steamed baby carrots. Most any fresh green veggies steamed. Chicken or Turkey broth soup over German egg noodles, noodles firm, not over-cooked. Giblet dressing. Hot spinach salad with sauted onion, mushrooms, and bacon. Lumpy, skin-on mashed potatoes. Black-eyed peas. Good luck! |

lazy bachelor ! huroumpfh Been cooking on my own since mom showed me the way to do a griddle. One of my favorites is cour don bleu normally made with chicken, but for the holidays, I use turkey breasts, stuffed with a glazed ham, sauteed mushrooms, a bit of wild rice stuffing, fresh swizz, battered, dunked in eggwash and toped with onion crumbles, fresh bacon bits and blue cheeze not for the faint o heart, serve with twice bake potoes, corn bread, cheezy pasta ockra jalapeno caserole a day to recover |

That spinach salad sounds good too, just have to isolate a portion from the shrooms- the GF can't stand them, no way no how... Good stuff!! we did beer can hens last year for chicken you shove a full can o beer up the abdomen and slow cook over the gril for game hens, its a red bull can, filled with beer, same affect, so damn tender wild rice in the slow crock, 4 cheese brussel sprouts (white chedder, asaigo, mozzarella and parmasean) BEER you can also to a small game hen in the fry daddy but it is best done out doors ! |
