Pork shank marinated in Coca-Cola then slow roasted in a paper bag....just falls off the bone, no need to spiral cut. |

Yeah +- ... when my mom passed, it was just before Thanksgiving- she'd already prepped the stuffing the week before, put it in the freezer... That was a tough Thanksgiving... To follow your thought there, I bought a little household sign today to give my sis- she's had a very hard time over the past couple of years missing our mom... it goes like this: "Sorrow looks backward Worry looks around Faith looks up." I encourage you to give it a try or three to replicate those old recipes your mom once did... my GF and I have succeeded in doing Mom's (gramma's?) old chicken and dumpling recipe, from scratch... YUM!!! |

Every year, my wife makes THE BEST stuffing for the bird ... she uses potato bread instead of regular bread, seasons it with rosemary and such, then adds dried apricots, cherries and apples to the stuffing mix for a little zing. Next to that is the sweet potato apple rings ... core and slice a couple of apples so they look like 1/2 inch thick rings; then mash some candied yams and mix them with diced apples, scoop the yam/apple mix on top of the rings, and bake. There's some spices in there as well, but neither she nor Mom will tell me the recipes. Num, num, num ...
On a side note, when I was growing up, I never knew how some of the 'uncles' and 'aunts' at holiday meals were related to me. My folks would introduce them as 'family', but I'd never see them again after that year. Come to find out, Dad (career Navy) would go thru the ship and make sure everyone had family/friends to spend the holidays with, and those that didn't came home to be part of our family for the day. We've been continuing the tradition here at our house on Thanksgiving and XMas for the last 15 years ... this year, 'uncle' Dwight and 'aunt' Stephanie also brought some plates back to the guys standing watch on the ship so they got some home cookin' as well. Folks serving in the military and their families sacrifice alot and don't always live near their relatives. If anyone out there knows anyone who serves our great country and doesn't have family in the area, take them in - even if just for a home-cooked holiday meal - and show them how much you appreciate what they are doing for all of us. I guarantee you will feel the true meaning of the seasons from it ... Happy Holidays to All! ~Doug |

+1- what Doug said!! Of course we're gonna enjoy our families, friends and food, exchange gifts and such- but also remember to reach out to those who might be a little lonely, neglected, or needy... After all, even though it's become a trite saying- what WOULD Jesus do? |

OK, I admit it- after starting this thread, and looking at all the great suggestions, researching recipes- I chickened out. Bought a smoked ham from our favorite BBQ joint. IT WAS YUMMY!! Before I commit to the learning process for smoking meats, I had to have a sure thing. Still gonna work up some Boston butt and various things, basically one of my New Year's resolutions. |
