I do a fair amount of riding around reservoirs, lakes, ponds, etc. and I am looking for ideas on a good fishing rig setup should I decide to pull over and take a break. Something compact, collapsible, or telescoping that can fit into a backpack would be ideal. I know there are plenty of them out there, I was looking for suggestions of ones fellow badwebbers have personally used or know of. Thanks!
They are never as good as a "real" rod, but they are fine for what you want to do. They come as packages, you might want to put new/better line on it, but heck, for occasional use, I'd say just grab one and have fun. iirc, the reel mount is standard, so you can always upgrade the reel, too. Wallyworld has a ton of small tackle kits to make that part easier to carry in a pack, too.

Back on topic, the rod/reel combo I have is telescoping, so it ends up looking fairly normal to fish with. Wouldn't want to land a huge lunker on it, but then again, it might do just fine.
I have a collapsible graphite rod from Bass Pro with 4 pound test on it... great fun to carry around on the bike for just playing.
I put an open face reel on it, then later switched it to a tiny little zebco retro closed face reel. Packs up nice and small, a fun little package, doubt I spent more than $25 on the whole setup.
I recently bought one. I have not got it wet yet but did put some line on it and did a few test casts. It works surprisingly well! It's a micro-ultralite pole and reel that is seriously packable. Bought if from Fast and Light.com. They have 3 styles and they are only $25.
A buddy of mine used to carry a pocket fisherman pole in his golf bag for those slow days with long waits at the T boxes, back when I played a lot of golf in central Florida. It was a lot of fun, but nearly got us tossed from a couple of courses!
Ive been using a Ugly Stick SPL 1104 60 for the last 6 years now for a back packing rod. Its med action, 4 piece 6 ft rod. Its proven to be durable as heck, and fishes darn good to. if I remember it was affordable , something like 30 bucks. Shouldnt be to hard to find its made by Shakespear.
