Hello. I was reading the installation instructions for the V&H exhaust just in case I wanted to install one. I was wondering, does this system require the exhaust port gasket and retaining ring as illustrated in the service manual? the V&H instructions aren't very clear on this point.

Does the V&H exhaust for the Blast have a baffle? The description on dennis kirk mentions that there is baffle but I am skeptical... I had one on my old blast back in the day and don't remember a baffle. If so, is the set-up any different than the 0.5" shim, 175/45 jet recommended? Thank you!

No baffle, same set-up.

I am essentially at sea level (gulf of mexico) but have a V&H Exhaust and a stock airbox/K&N filter. My jets are are 45/175. Do you think this is too rich for the set up or do you think I need to mod the airbox?

Try the shims yet? Jetting will be close, only you can figure out if its right. First check your spark plug for blackness (pull it hot, after a long ride and if you havent used ANTI-seize on the threads, do so before you pull it hot and use a torque wrench).
Better breathing is always good, but its not as if the airbox is choking the engine.

Yeah the bike runs well and the needle is shimmed 0.05" but I am just wondering if its running too rich. The last time I pulled the plug out was to check the timing but I haven't pulled it since I installed the V&H so I'll have to check it again. I guess I will have to try and see. IF I am running rich, based on the spark plug, should I pull a shim out before I down size the jet or should i downsize the jet before I pull a shim?

Either or. 170 and 2 shims might be better than a 175 and 0 shims. Or just 1 shim. Just change in steps, dont do it all at once. Fine tuning takes a little work and patience. But the difference with and without the 2 shims is often easy to feel.

Again, it might be perfect or as good as its going to get without more involved carb work.
